We have had these quite a bit over the last month. Once again, they are easy and quick to make. We have had them for lunch and supper.
The witching hour is real around our house and since the girls specifically are ready to eat shortly after 5, I don't always have a ton of time to get supper ready. Gavin isn't ever home at this time either so it can be a bit of a disaster if I don't have a plan.
You can add just about whatever you want to these so even if I don't have a plan, I can generally whip these up!
Turkey Paninis
--Deli Turkey ( I typically buy it from the meat counter.)
--Sliced Cheese
--Ezekiel Bread (in the Health Market at HyVee)
--Avocado
--Spinach
--Onion if you'd like
I keep our Ezekial bread in the freezer so I throw it in the toaster with the defrost option. Spread 1/4 avocado on one slice, top with turkey, and then add cheese and spinach to the other.
Assemble the two pieces and place on a griddle or pan. I set our griddle to 350 degrees or a pan at medium heat.
And easy as that! :-)
Enjoy!
